Sponge Toffee


Does this picture look familiar? If you're a candy addict like I am, it should.

I love all kinds of candy. I shudder to think of the hundreds of dollars I've likely spent in my life so far on Skittles, Starbursts, and suckers. And I'm not going to stop buying it any time soon.

That's why when I found a recipe for sponge toffee--one of my favourites, and it's featured in the picture I took above--I was ecstatic. I'm used to spending a dollar or more on a tiny brick of the stuff. Now, I can make it as often as I want for much less.

It's really simple to make, too. Some sugar, corn syrup, vanilla, and a bit of water, heated to the right temperature. Then baking soda is stirred in. Of course, a candy thermometer is a must. The first time I tried to make it, I used a Nigella Lawson recipe. She didn't specify a specific temperature, and so my crunchy, bubbly sponge toffee ended up a flat sticky mess.
