Tuesdays With Dorie: Buttery (Apricot) Jam Cookies
Oh, buttery jam cookies. You didn't really stand a chance.
You are the embodiment of cookie flavours that I'm not a fan of. Jam in cookies? Check. Buttery, shortbread-esque taste? Check. No chocolate or icing to speak of? Check!
But I tried anyway, just in case. Dorie has a way of surprising me, making me fall in love with recipes that initially made me hesitate.
I wish I could say the same for this recipe. I tried, honest.
But in the end, I just found it a little boring. The dried ginger in the recipe, which should've given it a nick kick of flavour, wasn't detectable (to me) in the finished cookie.
And so I was left with a perfectly fine cookie, perfectly cooked after 9 minutes but imperfectly browned on the bottom. Just fine. Not spectacular.
But I think that people that do like this type of cookie would like this recipe. It just wasn't for me.

I didn't think that the ginger would be good, so I substituted cinnamon for the ginger.
Then I fiddled around with it some more and had a fabulous tasting cookie.
You can always dunk the bottom in some chocolate, that might redeem them. Sorry you weren't a big fan.
ohhhhh...you had the same reaction i did! they were just OK. which is strange, because i loved the linzer cookies, which had a similar flavor. maybe it was the texture? of course, no chocolate is also a strike against it :)
either way, they came out looking lovely! sorry you didn't enjoy!
Yeah, I was really surprised by how much I did like them. At least you can cross them off the list though! :o)
I had the same reaction as you. they were fine but nothing special.
I am totally with you on these! I found them lacking in flavor and would rather have chocolate instead. Yours still look great though!
Even though they weren't thrilling, you made them look great! I felt like these would have been better as thumbprint cookies (with the jam on top).
